Ingredients
  

  • 🥩 300g chicken thighs cut into chunks
  • 🦐 200g shrimp peeled and deveined
  • 🌾 1 cup short-grain rice like Arborio
  • 🧅 1 medium onion diced
  • 🧄 3 cloves garlic minced
  • 🫑 1 red bell pepper sliced
  • 🍅 2 medium tomatoes diced (or 1/2 cup canned tomatoes)
  • 🧂 1 teaspoon smoked paprika
  • 🌿 1/2 teaspoon saffron threads optional
  • 🥣 2 cups chicken broth
  • 🫒 2 tablespoons olive oil
  • 🧂 Salt and pepper to taste
  • 🍋 Lemon wedges for garnish

Instructions
 

  • Prepare Ingredients: Dice the onion, mince the garlic, and slice the bell pepper. Set aside. 🧅🧄
  • Cook Chicken: Heat olive oil in a large skillet or paella pan over medium heat. Add the chicken chunks and cook until browned on all sides. Remove and set aside. 🥩
  • Sauté Vegetables: In the same pan, sauté the onion, garlic, and bell pepper until softened. Stir in the tomatoes and cook for 2-3 minutes. 🍅🫑
  • Add Rice and Spices: Stir in the rice, smoked paprika, and saffron (if using). Cook for 1-2 minutes, coating the rice in the spices and oil. 🌾
  • Add Broth and Simmer: Pour in the chicken broth. Bring to a boil, then reduce heat to low. Arrange the chicken and shrimp on top of the rice. Cover and let simmer for 20-25 minutes, until the rice is tender and the liquid is absorbed. 🥘
  • Finish and Serve: Remove from heat and let the paella rest for 5 minutes. Garnish with lemon wedges and serve hot. 🍋
